Linguine with Clam Sauce

Ingredients

  • 10 fresh clams (optional)
  • 2 (6.5 ounce) cans chopped clams, with juice
  • 1/4 tsp red pepper flakes
  • 3/5 Tbsp cornstarch
  • 1/4 cup butter
  • 1/2 cup olive oil (extra virgin or preference)
  • 1/2 teaspoon minced garlic
  • Flat leaf (Italian) parsley, chopped, to taste
  • Basil, chopped, to taste
  • ground black pepper to taste
  • lemon (optional)
  • 1 (16 ounce) package linguini pasta

Directions

1. Bring a large pot of salted water to boil. Cook pasta to al dente.

2. Add 1 Tbps of the olive oil to a saucepan, heated to medium, and add the red pepper flakes to tame the spiciness. 1-2 min.

3. Add garlic (and fresh clams if available), stir 30 seconds.

3. Combine butter, rest of olive oil, chopped clams with juice, parsley, basil, and pepper in a large saucepan. Slowly sift 3/4 tbsp of corn starch into sauce to thicken.

4. Serve warm over pasta.

5. Top with any of the following: fresh parsley, basil, black pepper, parmesan cheese, fresh squeezed lemon, crusty bread slices
